Basic preparation:
Select Big Jalapeño Chiles. Clean and cut the up part. Remove seeds.
Filling:
Just as you want. It can be just the chile or it can be filled with cheese, meat, beans, shrimps, crabs, corn, etc. Put a toothpick through the wider part. Besides the toothpick, some people prefer to put a bacon portion at the up part. This is a good cooking indicator, when bacon is cooked, means it is done !!!
